Apple Cottage Cheese Balls

What is the best thing about carnival days (in Germany)? Of course it's all the yummy, deep fried pastries you can find in bakeries at the time! You can indeed easily make these treats at home. Just like this variation of classic cottage cheese balls.

Description

Juicy cottage cheese balls, refined by grated apple and rolled in cinnamon sugar. They are best served slightly warm, a real treat!

Ingredients
  • 250 g all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder (heaping)
  • 250 g cottage cheese
  • 125 g sugar
  • 1 tsp vanilla sugar (alternatively 1 tsp of vanilla extract)
  • 2 eggs
  • 1 apple (skinless and grated)
  • oil for deep frying (e.g. coconut oil)
  • 1 smaller cup of cinnamon sugar
How it is done:
  1. Prepare the batter

    Add cottage cheese and eggs to a big mixing bowl and mix well. Then add sugar and vanilla sugar or vanilla extract and mix again. Furthermore, add flour, salt and baking powder and mix these ingredients on the lowest setting of your handheld mixer until just combined. There shouldn't be any lumps of flour visible anymore. Then fold in the peeled and grated apple.

  2. Mix cinnamon sugar

    Add sugar and some cinnamon to a small bowl and mix well. You can transfer the cinnamon sugar to a small plate for easier rolling of the apple cottage cheese balls after frying.

  3. Frying the Apple Cottage Cheese Balls

    Heat your frying oil in a deep fryer or pot to 300° F (150° C) and add balls of batter with an ice cream scooper. Don't add too many balls of batter at a time, because the cottage cheese balls will expand in volume and the oil might drop in temperature. Bake the cottage cheese balls golden brown on both sides, about 5 minutes on each side.

  4. Finish Cottage Cheese Balls

    Roll your still warm apple cottage cheese balls in cinnamon sugar right after frying and serve immediately. Leftover cottage cheese balls freeze very well.
