Healthified Bittersweet Chocolate Hazelnut Spread

I always have this healthified semisweet chocolate hazelnut spread in my fridge. I love this simple recipe and that it is so versatile!

Description

This chocolate hazelnut spread is delicious on bread and banana bread and perfect as a topping sauce for porridge and ice cream (it even turns hard shell!) as well. As opposed to the original, no palm oil or sugar is used, but this spread mostly consists of roasted, pureed hazelnuts and sugar-free chocolate. It's to die for!

Ingredients
  • 150 g hazelnuts
  • 100 g (sugar-free, low carb) bittersweet chocolate (can also use milk chocolate, I like to use chocolate bars by Simply Keto)
  • 65 g erythritol
  • 2 tbsp cocoa powder (unsweetened, for baking)
  • 0.5 tsp vanilla extract
  • 1 pinch salt (optional)
  • 1 pinch cinnamon (optional)
  • 1 tbsp (liquid) coconut oil
How it is done:
  1. Melting chocolate

    First you need to melt the chocolate in a bain-marie. If you feel courageous, you can also melt chocolate in the microwave at about 400 Watt for a few minutes. The chocolate can easily burn in the microwave, so be careful and keep an eye on it!

  2. Roasting hazelnuts

    Place the hazelnuts on a baking tray lined with parchment paper. Then roast the hazelnuts in a preheated oven at 350°F (180°C) for 9-12 minutes.

  3. Remove hazelnut skin

    Carefully transfer the toasted hazelnuts to a clean kitchen towel. Use the towel to remove the hazelnuts' skin by rubbing your hands together. When the hazelnuts have cooled down enough, you can also rub them between your hands. Try to remove most of the skin but don't beat yourself up if some skin stays on. It's gonna be okay!

  4. Purée hazelnuts

    Put the hazelnuts into a food processor and mix them long enough to turn into nut butter. You should take breaks to scrap down the sides once in a while. You can proceed as soon as the mixture is liquidy and there aren't any lumps. Rather overmix than undermix.

  5. Final mixing

    Add all of the remaining ingredients to your food processor and give it another good mix. Then transfer your chocolate hazelnut spread to a clean jar. Your spread keeps fresh in the fridge for longer.

Remark

When stored in the fridge, this spread will harden and become solid. It returns easily into it's liquidy form after 1 minute in the microwave.

This chocolate hazelnut spread also makes a great ice-cream sauce or topping for sweet bowls or porridge.
