This healthified deep dish cookie pie is made without any flour, sugar, butter or oil - that's why I consider it to be healthy. This is due to a secret ingredient ... the main ingredient ... I'm speaking of chickpeas! Additionally, they add some extra protein!
Many of you might not be able to imagine this, but especially cookies and cakes are an excellent choice to be baked with beans. You won't be disappointed! There is even a category called baking with beans dedicated to these recipes on this site. Feel free to discover it for more inspiration!
This recipe is my favorite variation of "Deep Dish Cookie Pie" of the blog "chocolate covered katie". She published this recipe in several variations and this is where you find the absolute best!
Healthified Deep Dish Cookie Pie
This deep dish cookie pie looks just as gooey, delicious and chocolatey as it tastes. And you don't even have to feel guilty about enjoying this one, because this cookie pie doesn't need any flour, sugar, oil or butter. The secret ingredient are chickpeas! The legumes add a good portion of protein in this recipe. Refined sugar is replaced by dates.

How it is done:

Line a 7 inch baking dish (springform pan) with parchment paper and / or grease it properly with oil or butter.

Add the oats to your food processor and grind it resulting in oat flour. Add the oat flour to a seperate bowl and set aside.

Add the dates to your food processor and grind throroughly.

Add all of the other ingredients to your food processor, except for the chocolate, cacao nibs and the oat flour. Mix thoroughly.

Add the mixture to the bowl of oat flour and mix well.

Cut the chocolate into small pieces and add them to the bowl alongside with the cacao nibs and mix well. I like to set aside some bigger chunks of chocolate to top the cookie pie with.

Add the cookie dough to the prepared baking dish. Now use the chocolate chunks to top your cookie pie with.

You can either bake the cookie pie straight away or you can put it in the fridge first. Bake the cookie pie for 30 min. at 350°F.
