I love this recipe because I can't get enough of pickles... For some, the acidity of pickles combined with chicken and a creamy, cheesy sauce might seem like a strange combination. But then you should try my recipe for chicken and pickle strips!

This is one of the recipes my mom "invented" and added to our rotation at home. Since she and I don't like mushrooms, we never had schnitzel in a mushroom cream sauce. This chicken and cucumber schnitzel fills that gap perfectly! The anti-fungal answer!

I only made one small adjustment to this recipe, because I usually don't use heavy cream but cream cheese to cook.

Chicken Strips & Pickles Stir-Fry

Ingredients

Instructions:

  1. Chop the onion and pickles in very small pieces. Afterwards, cut the chicken breast into fine strips, too.

  2. Now add the butter to a pan* (see notes) and sear the chicken once the pan is hot. Let the meat brown a bit to create a roasted flavor!

  3. Season with salt and pepper.

  4. Then add and also fry the onion.

  5. Add a splash of pickle liquid to the pan to deglaze. Then add the chopped pickles, also.

  6. Now add the cream cheese to a free area in your frying pan, let is melt into your sauce and mix well. Then also add milk and processed cheese / cheese spread and let the sauce come together.

  1. Add another splash of pickle liquid or you can just use regular water if it is already sour enough for you taste.

  1. Season the chicken and cucumber strips with salt and pepper and bring to a boil – then you can serve it.

I suggest to serve this chicken strips & pickles stir-fry with a side dish of (brown) rice.
