On hot summer days, I long for something refreshing – light, cool, and preferably homemade. This yogurt ice cream / frozen yogurt is just that: creamy, pleasantly sweet, and completely sugar-free without any additives. It's a little bit of summer happiness in a bowl, quick to prepare, and perfect for those who like things healthier and natural. Whether as a snack between meals or as a healthy dessert – this yogurt ice cream is a simple way to sweeten up warm days.

Vanilla Extract as an Important Ingredient in Yogurt Ice Cream

Really good ice cream is creamy, but not liquid or crystalline. The art of making really good ice cream is getting the consistency right.

In my recipe, I use homemade vanilla extract. I bought about 10 vanilla pods, cut them lengthwise, and then let them steep in a bottle of vodka for several weeks. Since alcohol doesn't freeze, it's a good idea to add a little vanilla extract (i.e., vodka)! It improves the consistency and also contributes to the flavor. I highly recommend using a little vanilla extract in ice cream recipes!

  1. Place yogurt, salt, stevia, erythritol and vanilla extract in a small bowl and mix well.

  1. Then fill the ice cream mixture into the container of your ice cream maker* (see remarks).

  1. Place the container in your ice cream maker* (see remarks) and turn it on. Let the machine run for about 30 minutes, or until the mixture is thoroughly frozen without forming large ice crystals.

    Alternative to an ice cream maker: If you don't have an ice cream maker, you can pour the ice cream mixture into a container and place it in the freezer. Stir the mixture every 30 minutes. This should mimic the stirring process of the ice cream mixture in the ice cream maker. Using this method, you can enjoy your ice cream after about 6 hours!
  1. Now you can enjoy your frozen yogurt! If the consistency is still too runny for your taste, you can transfer the ice cream mixture to a container with a lid and let it set in the freezer for another 1-2 hours.

Remark

Please note that this recipe does not contain any ingredients such as xanthan gum, locust bean gum, or inulin. This means the ice cream should be consumed immediately after making and cannot be stored in the freezer for an extended period of time (no more than 2 hours). It's best to only make as much ice cream as you plan to consume!
