Every Italien needs to be really strong and push through this one, because this recipe is for sure anything but authentic ... But, it is a very quick recipe, very easy and absolutely delicious. Lots of thanks to my Mom who made this recipe her own and established it in our family's beloved rotation of meals.
Tortellini in creamy Tomato Sauce
Quick and delicious - what's more to want from a meal? This is the reason why this tortellini recipe is perfect for those working from home days. Add more flavor and texture to this dish by topping it with fresh cherry tomatoes, arugula and some roasted pine nuts for some roasting flavor - just a dream.

Wash the tomatoes and arugula and cut the tomatoes in half.

Add the pine nuts to a small frying pan and carefully roast them. You don't need any oil. Take care and don't burn them.

Bring a pot of salted water to a boil and cook the tortellini according to the instructions on the package.

Add the cream cheese to a small pot, let it melt a little on middle-high heat and stir it until creamy. Then add a splash of milk and stir to combine. Next add the tomato puree and season with salt and pepper to taste. Then let it come to a boil.

Strain off the tortellini water and add the tomato sauce to the tortellini, then spoon one serving for each dish. Add the tomatoes and arugula. Finally, add the roasted pine nuts and grated Parmesan cheese to the dish and serve.
