A balmy summer evening, the sun slowly sinks towards the horizon, and the air is filled with cheerful laughter and the tantalizing aroma of the barbecue fire. Family and friends are gathered, the table is lovingly set, and a colorful, crisp salad is waiting to be served. But which dressing will perfectly round it all off?

How about a creamy lemon tahini dressing that perfectly captures the flavors of summer? The subtle nuttiness of the tahini blends beautifully with the tangy freshness of the lemon, adding a special touch to any salad. It's wonderfully creamy, yet light and refreshing—just the thing for warm days.

Tahini, a paste made from finely ground sesame seeds, is particularly well-known in Middle Eastern and Mediterranean cuisine. It's widely used in countries like Lebanon, Turkey, and Greece – often as a base for hummus or dips. It really shines in this dressing.

The best part? It's incredibly quick to prepare and requires only a few ingredients. A few drops of lemon juice, some tahini, a little garlic, a pinch of salt and pepper, and a little water create a dressing that's perfect not only for salads, but also for grilled vegetables or bowls. Instructions:

  1. Put all ingredients in a screw top jar and close it tightly.

    Tip: If you find the flavor of raw garlic in the dressing too intense, you can use garlic powder instead. It isn't quite as strong.
  1. Shake the jar well until all ingredients are well combined.

  1. Taste the lemon tahini dressing and add more salt and / or pepper if desired. You can also adjust the consistency by adding more water.
